German Potato Salad (swabian style)
This German potato salad from the region Swabia is one of my favorite side dishes for hot summer days and especially when grilling. Versatile as a side dish because it almost always fits. Most people like a healthy potato salad with a light dressing and even most children like to eat this side dish.
Prepare potatoes
Shallots

Boil potatoes in water until firm to the bite. Then peel the potatoes while they are still warm, cut them into thin slices and place them in a bowl. It must be so that the potato slices partially fall apart when cut. Peel the shallots, cut them in half, remove the roots and cut them very small and add them to the potatoes.
Prepare the dressing
Chicken stock (unsalted, homemade)
ml (milliliter)
Apple vinegar
tb (tablespoon)
Salt
pn (pinch)
Salt potatoes, mix apple cider vinegar with chicken stock and pour over potatoes. Stir carefully and let stand for at least 1 hour (or better let stand overnight in the refrigerator). Depending on the potatoes, all or at least most of the dressing will be absorbed.

Chives (fresh)
tb (tablespoon)
Nutural oil
tb (tablespoon)
Pepper (freshly grounded)
pn (pinch)
After the potato salad has absorbed the dressing, chicken stock can be added as desired. I personally like the potato salad moist and mushy. Add chives, oil and spices and mix everything well.
